Chocolate Chunk Oatmeal Cookies- Another Camper Favourite!

Another no fuss option! Recipe and how to put it all together, detailed below. Children from the ages of 7 to 14 made this treat during our Summer 2018 Excellence Camp.

Makes about 30!

Ingredients

  • 150g butter
  • 230g Soft brown sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 125g plain flour
  • 1 tsp (level) baking powder
  • 230g pinhead oatmeal
  • 150g chocolate chips (or a bar chopped into small chunks)

Method

Butter should be at room temperature.

Mix (cream) the butter and sugar together until light and fluffy. If using unsalted butter add a generous pinch of salt.

Add the egg and vanilla and mix through.

Stir the baking powder into the flour (this helps to distribute it evenly) and add the flour, oatmeal and chocolate chunks to the mix.

Stir until everything is evenly incorporated.

To make 2 cookie dough logs:

Lay 2 pieces of cling film or greaseproof paper on the worktop.

Scoop half the mixture down the centre on each sheet.

Wrap and roll to form a log about the same diameter as a golf ball.

Chill in the freezer for 1⁄2 an hour or the fridge for a couple of hours.

The mixture can be pre made to this stage and stored in the fridge for up to a week or the freezer for 3 months.

To Bake:

Heat oven to 160 (fan)/gas 4.

Remove the paper or cling film.

Slice the log into 1cm slices.

Line baking trays with greaseproof paper or parchment and space the cookie slices out well.

Bake for 12-15 minutes for chewy cookies or until lightly golden for crisp cookies. Cool on wire racks.
